A fascinating libation steeped in history, this cherry variation of the Sazerac blends smooth whisky with tart cherry juice and bitters. In addition to this, the herbal and liquorice profile from ‘rinsing’ the glass elevates the flavour of the cocktail further.

  • Bourbon or rye whisky
    30ml
  • Cherry syrup or muddled cherry
    Bar spoon
  • Angostura bitters
    Dashes
  • large ice cube
  • Brandied cherry
    For garnish

Method

  1. Step 1

    In a short glass, place cherry syrup and bitters to form the foundation, adding sweetness and fragrance without dominating the whisky.

  2. Step 2

    Add whisky over the mixture, with the spirit marrying slowly with the syrup and bitters beneath.

  3. Step 3

    Insert one large ice cube, stirring moderately for 20 seconds to cool the drink and combine flavours without over-dilution.

  4. Step 4

    Garnish with a brandied cherry placed into the glass; serve immediately to preserve balance and beauty.

Tips & Suggestions

  • Muddle the cherries lightly with sugar and bitters; overdoing tears skins and adds bitterness, blunting the drink's finish.

  • Garnish with a brandied cherry on a pick, nestled tidily; it enhances fruit flavour while imparting a final aromatic nuance with each sip.
