The original hot toddy traces its roots to 18th-century Scotland, where it was first prepared as a spirit-based drink intended to provide flavour during the region’s harsh winters. It gradually became popular in other parts of Europe and later across the world, with each region introducing its own twist by altering the spices, sweeteners, and citrus elements. What began as a simple hot drink evolved into a cultural staple, valued as much for its aroma as for its gentle heat. The zero-proof adaptation preserves the defining qualities of the original while excluding alcohol, making it suitable for a wider range of preferences. This version relies on the infusion of spices such as cinnamon, cloves, and ginger blended with warm water, honey, and citrus. Together, they create a balance between sweetness, spice, and citrus brightness. The drink’s smooth texture and aromatic complexity enhance its appeal, especially during colder months.   • Honey
    20ml
  • Boiling water
    To top up
  • Lemon peel or wheel
    For garnish

Method

  1. Step 1

    Fill a mug with boiling water and let it stand for a couple of minutes.

  2. Step 2

    Meanwhile, stick the cloves into a lemon peel or wheel and set aside.

  3. Step 3

    Infuse the remaining whole spices into freshly boiled water for 5 minutes.

  4. Step 4

    Strain and pour into an Irish mug before stirring in the honey.

  5. Step 5

    Garnish with the clove-studded lemon peel before serving.

Tips & Suggestions

  • To get the flavour of the spices, simmer them in boiling water for 5-10 minutes to give the mocktail a complex flavour.

  • Squeeze the lemon juice just before serving else it may become bitter or dull in taste.

The main difference lies in the absence of alcohol. While the traditional version uses whisky, rum, or brandy, the virgin hot toddy relies on the richness of spices and citrus for depth.

Although traditionally served warm, the virgin hot toddy can be adapted into a chilled version. Serving it over ice with a dash of sparkling water transforms it into a spiced beverage suitable for milder climates while maintaining its distinctive aromatic qualities.
