  • Mint leaves

  • Lime wedges

  • Sugar syrup
    2 parts sugar dissolved over heat into 1 part water
    25ml
  • Apple juice
    50ml
  • Mint sprig
    1
  • Ice

2.2 units of alcohol per serving

Equipment

  • Highball glass
  • Muddler
  • Spoon

Method

Step 1

Place the mint leaves and lime wedges into the highball glass and press down gently with the muddler to extract the flavours and aromas.

Step 2

Add the gin and sugar syrup, then fill the glass with crushed ice and and churn with a spoon.

Step 3

Top up with apple juice.

Step 4

Garnish with a sprig of mint.
