This Tequila Mojito takes the familiar freshness of mint, lime and soda and gives it a spirited agave-driven twist by swapping rum for blanco tequila, creating a drink that’s bright, crisp and herb-forward with a subtle citrus zing. Equipment

  • Highball glass
  • Jigger
  • Muddler
  • Bar spoon

Method

Step 1

Press down on the mint leaves in a highball glass using a muddler to extract juices and flavour.

Step 2

Add the tequila, lime juice and lemon juice to the glass and top with crushed ice.

Step 3

Stir and churn the mixture with a long spoon, then top up the glass with the soda water.

Step 4

Garnish with the lime wedges.
