Credited as being born in Bermuda and traditionally made by layering dark rum over fiery ginger beer, this drink gets its name from the dramatic contrast between the deep rum and the fizzy ginger base - resembling storm clouds gathering on the horizon. Much like its name, the origin of the cocktail is dark and murky, i.e. not clear. But that does nothing to impact its popularity. From hidden bars specialising in craft cocktails to dive bars with simple mixes, the dark and stormy cocktail is on every bar menu. And the reason for that is simple – the interaction of the ingredients. The ginger beer, in particular, is special enough and can’t be replaced with ginger ale or any other ingredient. Because the inherent spicy bite in ginger beer interacts beautifully with the strong rum, resulting in the signature flavour. 

However, variations of the drink do exist. The most common variation asks for the addition of bitters to the drink. It adds depth and enhances the spicy notes of the ginger beer, resulting in a more balanced cocktail. Other popular twists include The Stormy Mule cocktail, which adds vodka to the rum and ginger beer base for a slightly stronger, neutral foundation, and The Tropical Storm cocktail that replaces half of the ginger beer with pineapple juice or coconut water to introduce a sweet, fruity element.

How to make the Dark and Stormy cocktail?: Mastering the Technique

The key to mastering this highball cocktail is maintaining the separation between the dark rum and ginger beer. Rather than vigorously mixing the drink, gently float the rum over the ginger beer to create the cocktail's signature layered appearance. Also, while fresh lime juice adds brightness, avoid adding too much, as excessive acidity can overpower the balance between the rum's richness and the ginger beer's warming spice.
