  • Champagne

  • Simple syrup
    13ml
  • Ground allspice

  • Lime juice

Method

  1. Step 1

    Add the simple syrup and ground allspice into a cocktail shaker, followed by the rum and lime juice.

  2. Step 2

    Fill the shaker with ice and shake well until chilled.

  3. Step 3

    Double-strain the mixture into a chilled flute or coupe glass.

  4. Step 4

    Top up with champagne to retain the fizz.

  5. Step 4

    Garnish with an orange peel twist placed on the rim or inside the drink before serving.
