  • Gin
    20ml
  • Dry vermouth
    10ml
  • Raspberry syrup
    15ml
  • Fresh lemon juice
    10ml
  • Fresh lime juice
    5ml
  • Egg white (about half of an egg white)
    15ml
  • Ice cubes
  • Fresh raspberry or lemon twist
    For garnish

  • 1 x Coupe glass
  • Jigger
  • Shaker
  • Strainer

Method

Step 1

Combine gin, dry vermouth, raspberry syrup, lemon juice, lime juice and egg white in a shaker.

Step 2

To emulsify the egg white, briskly shake it for 15 seconds without using any ice.

Step 3

Add ice and shake for another 15-20 seconds, until well cooled and frothy.

Step 4

Double strain into a chilled coupe glass, then garnish with a fresh raspberry or lemon peel twist.

Tips & Suggestions

  • Use a pre-chilled coupe glass with a wide bowl to highlight the frothy top and allow the drink’s aroma to shine.

  • Strain twice, first through a cocktail strainer and then through a fine mesh sieve, to eliminate ice shards and achieve a silky-smooth texture.

Yes, you can replace egg white with aquafaba in the cocktail to obtain similar frothiness and texture, making it an ideal plant-based option.
