- Soda water5oz
- Caster sugarTablespoons2
- Strawberries3
- Lime wedge2
- Mint sprig1
- Mint leaves5
- Crushed ice
Equipment
- Highball glass
- Muddler
- Bar spoon
Method
Step 1
Put the lime wedges, mint leaves, strawberries (without the green stalk) and caster sugar into a highball glass and gently press down with the muddler to extract the flavour and aromas.
Step 2
Add crushed ice to the glass.
Step 3
Add the rum, and churn using the bar spoon. Then top up with the soda water.
Step 4
Garnish with a sprig of mint.
