The mojito cocktail is a classic Cuban drink that is well-known around the world for its unparalleled taste. Its vibrant herbal-citrus foundation is topped with effervescent soda water to make a lively, fizzy drink.

    30ml
  • Fresh mint leaves

  • Fresh lime juice
    15ml
  • Sugar syrup
    10ml
  • Soda water
    to top up
  • Mint sprig
    For garnish
  • Ice cubes

Method

  1. Step 1

    In a shaker, gently muddle mint leaves with lime juice and sugar syrup to release essential oils.

  2. Step 2

    Add the white rum and a handful of ice, before shaking vigorously to chill and combine the flavours.

  3. Step 3

    Strain into an ice-filled highball cocktail glass and top with soda water; decorate with a mint sprig and serve immediately.

Tips & Suggestions

  • Instead of refined sugar in simple syrup, use a 1:1 ratio of demerara sugar to water; its subtle molasses overtones offer a deeper, richer sweetness that complements the rum, creating a nuanced backbone.

  • Before building, pour 2-3 ml of white rum into the cold serving glass, swirl to coat the inside and discard - to infuse the glass with a slight rum aroma.
