The Miami Vice cocktail is a visually appealing and delightful frozen beverage that embodies an ultimate tropical fusion. The drink blends strawberry daiquiri and piña colada cocktail flavours, resulting in a stunning, two-toned drink with a balanced blend of strawberry, coconut and pineapple flavours, all chilled to frosty perfection.

  • For the Strawberry Daiquiri Cocktail Layer:
  • White rum
    15ml
  • Frozen strawberries (about ½ cup)
    60ml
  • Fresh lime juice
    15ml
  • Simple syrup (or to taste, adjust for strawberry sweetness)
    7ml
  • Crushed ice (or more, for desired consistency)

  • For the Piña Colada Layer:
  • White rum
    15ml
  • Pineapple juice
    60ml
  • Coconut cream
    30ml
  • Crushed ice (or more, for desired consistency)

  • Pineapple wedge or leaf
    For garnish
  • Fresh strawberry

  • Cocktail umbrella (optional)
    For garnish

Method

  1. Step 1

    Blend the rum with strawberries, lime juice, syrup and ice until smooth. Pour half into a serving glass and place in the freezer while preparing the piña colada.

  2. Step 2

    Rinse the blender and add the rum, pineapple juice, cream of coconut and ice. Blend till creamy and smooth.

  3. Step 3

    To keep the strawberry layer separate, gently pour the piña colada cocktail mixture on top.

  4. Step 4

    Garnish immediately with a pineapple slice and a halved strawberry. Serve embellished with a straw and cocktail umbrella.

Tips & Suggestions

  • To make artistic swirls, drizzle a small bit of the second (piña colada) mixture from various heights and angles into the first (strawberry daiquiri) layer instead of pouring it as two layers.

  • If the cream of coconut is excessively thick, reheat it gently (in a hot water bath) before blending. This results in a smoother, silkier piña colada cocktail layer without icy clumps.
