The Honey Bee cocktail is a wonderful and lesser-known, yet equally appealing, member of the classic ‘sour’ cocktail family. It is constructed on a simple, beautiful foundation with three key elements. While not as well-known as its cousin - the bee’s knees cocktail (which utilises gin instead of rum), the honey bee is frequently referenced in cocktail literature as a rum version of the classic.

  • Light rum
    30ml
  • Honey syrup
    10ml
  • Fresh lime juice
    10ml
  • Ice cubes
    For shaking
  • Lime wheel
    For garnish

Method

  1. Step 1

    Chill a coupe or martini cocktail glass completely by freezing it or filling it with ice water.

  2. Step 2

    In a cocktail shaker, combine the light rum, honey syrup and freshly squeezed lime.

  3. Step 3

    Add ice cubes into the shaker, secure the top and shake properly for 15-20 seconds until the surface is well-cooled and frosted.

  4. Step 4

    Strain the mixture into a chilled glass and garnish with a lime wheel.

Tips & Suggestions

  • Never use raw honey straight; it will not mix evenly with other ingredients. Always make a 1:1 ratio honey syrup by dissolving honey in equal parts of lukewarm water and cooling thoroughly

  • Before blending the key ingredients, ensure that they are as cold as possible to enable minimal dilution throughout the shake, resulting in a more concentrated flavour.

No, honey syrup is honey that has been diluted with water which results in a liquid that blends easily into cocktails, as opposed to thick honey in its raw form, which is difficult to mix.

The standard ratio for honey syrup is 1:1. Combine equal parts honey and warm water by volume, mix until dissolved, then chill before use.

Simple syrup is the most popular replacement; agave nectar or light maple syrup can also be used to achieve a comparable natural sweetness, though the flavour profile will differ.
