The Australian scotch and lemon highball is a simple cocktail that showcases the lighter side of whisky. This beverage features Johnnie Walker Red or Black Label, based on preference, which provides smooth malt aromas and a hint of smoke without overpowering the drink.

  • Johnnie Walker Red or Black Label (or any scotch of choice)
    30ml
  • Lemon barley cordial
    20ml
  • Chilled soda water
    90ml
  • Lemon peel
    For garnish
  • Ice cubes
    For serving

Method

  1. Step 1

    Pour the scotch and lemon barley cordial into a highball glass filled with ice to achieve slow dilution.

  2. Step 2

    Stir slowly for 10-15 seconds to evenly combine the whisky and cordial without overmixing or losing temperature.

  3. Step 3

    Pour cooled soda water carefully, to preserve carbonation and keep the texture bubbly.

  4. Step 4

    Twist a lemon peel over the drink to release aromatic oils, before adding it in for a vibrant citrus finish and visual lift.

Tips & Suggestions

  • Chill the lemon barley cordial before mixing; a tepid syrup flattens the drink and dulls flavour.

  • To keep the carbonation intact and the drink vibrant, gently pour soda water down the side of a bar spoon or glass.
