  • Tanqueray No 10 gin (or any other gin of choice)
    30ml
  • Fresh fig purée
    20ml
  • Thyme syrup
    15ml
  • Fresh lemon juice
    10ml
  • Thyme sprig
    For garnish
  • Ice cubes

Method

  1. Step 1

    Add the fig purée, thyme syrup, gin and lemon juice into a cocktail shaker filled with ice.

  2. Step 2

    Shake thoroughly until the mixture is well chilled and smoothly combined before straining into a chilled coupe or martini cocktail glass to maintain clarity.

  3. Step 3

    Garnish with a sprig of fresh thyme by placing gently on top or across the rim.

Tips & Suggestions

  • Use well ripened figs for purée, preferably with a slightly soft texture, as underripe figs can taste bland and reduce the cocktail’s sweetness and vibrancy; blend with the skin for a richer flavour base.

  • Lightly torch the thyme sprig just before garnishing to release its aromatic oils.
