A tall glass filled with a dark red beverage, garnished with a slice of fruit on the rim, sits on a reflective surface against a dark background.

The Lazy Coconut Paloma cocktail is a straightforward tropical drink with a distinct coconut twist on the original paloma. Its ‘lazy’ moniker emphasises its straightforward, built-in glass preparation, making it suitable for casual and formal gatherings, for a light, subtly sweet, tropical sip.

What you’ll need

Ingredients

Serves:
1
  • Coconut liqueur
    30ml
  • Fresh grapefruit juice
    60ml
  • Chilled soda water
    60ml
  • Ice cubes
    For serving
  • Grapefruit slice or wedge
    For garnish

Method

  1. Step 1

Fill a large highball or Collins cocktail glass with ice cubes.

  2. Step 2

Add the coconut liqueur before pouring fresh grapefruit juice over it and topping with soda water.

  3. Step 3

Using a bar spoon, gently swirl the ingredients together once or twice to avoid losing too much fizz.

  4. Step 4

Garnish with a grapefruit slice or wedge and serve immediately.

Tips & Suggestions

  • Elevate the coconut paloma with a tequila-based coconut liqueur since it delicately incorporates agave notes, offering depth and a deeper connection to the classic version.

  • Instead of a whole salt rim, use half a rim of finely crushed pink Himalayan salt. The visual appeal is not only remarkable but the salt touches only half of the glass, allowing for diverse sips depending on the preference of the drinker.
