Introduction

Bars in Bangalore are revisiting classic cocktails and giving familiar formats a new spin with distinct ingredients, techniques and flavour combinations. Rather than breaking away from established recipes, bartenders are experimenting within them by adding new textures, aromas and flavour profiles, while maintaining their recognisable character.

1. SOKA

SOKA approaches familiar cocktail formats with unusual ingredients, earning the 28th spot on Asia's 50 Best Bars 2025. The 38-seater is renowned for its artisanal cocktails, paired with a succinct list of refined small plates. The Pi Pi Martini cocktail has an Indian gin base, derives its tangy brine from jujubes and includes dry vermouth, creating an original twist on the classic beverage. Made In Heaven cocktail takes things in a tropical direction by getting its notes from aged rum mixed with coconut and strawberries. Creamy, fruity and lightly tangy, it moves away from the conventional rum cocktail without losing a clear spirit-led structure.

2. Bar Spirit Forward

Ranked 30 on Asia’s 50 Best Bars 2026, Bar Spirit Forward is all about precision in drinks and an “anti-speakeasy” space. For instance, the 3-Gin Vesper Martini cocktail mixes three gins, including Tanqueray No. TEN, with vodka and aromatised wine. The drink is layered, balanced, and has a classic, crisp dry finish. The trick to achieving that signature cold temperature? The spirits are not shaken or stirred but prediluted and frozen.

ZLB23, in The Leela Palace, is a Kyoto-inspired speakeasy. The vintage decor and hidden entrance pay tribute to the 1920s Prohibition-era hideaways, while the drinks bring flavours inspired by Asian dishes in a glass. The Southern Embre cocktail, inspired by rasam, consists of tequila, mezcal, tamarind, pineapple, curry salt and coriander. And the Shoyu Ramen combines shiro miso, tequila, and sake to tap into the flavours of the popular noodle dish. The food also leans more delicate and gourmet, with dishes like hickory-smoked duck, lobster, and more on the menu. It ranked 31 on Asia’s 50 Best Bars 2025 list.

For two years in a row, Muro, with its inventive craft cocktails and Thai-Cantonese cuisine, appeared on the 30 Best Bars in India. The Thai-Cantonese touch can even be found in its drink selection, the regular serve and the off-the-menu secret cocktail list; the latter features more experimental flavours and unconventional ingredients like malai, durian, etc. The Eat Your Art Out cocktail brings together whisky, roasted rice and beet, along with a sea salt foam. The earthy richness of the roasted rice and beet goes well with the smoky flavour of whisky, ending with a salty tartness. The cocktail is topped with an edible artwork.

5. 403 Forbidden

403 Forbidden, an experiential cocktail bar in Bangalore, treats attention as part of the experience. The space, sound, lighting and service are designed to keep attention on the drink and the conversation rather than on a loud nightlife environment. The name“403 Forbidden” comes from the internet error meaning access denied; here, it's reframed as distractions denied. The drinks feature unusual but complementary flavours, like amla and basil or chai and mint. It’s also known for its limited, by-request personalised cocktail ritual.

What Sets These Bars Apart?

  • Old formats, new profiles. The classic cocktail structures are the base, but the ingredients point to far more unconventional flavour combinations.

  • Contrast is important. Bitter and tart, smoky and savoury, creamy textures and acidity. All sitting together in more layered flavour profiles.

  • Technique is at the forefront. Stir, mix, and shake are the core techniques, but these bars take things to the next level. Clarifications, predilution and more advanced techniques go into making a craft cocktail.

  • Culinary influences add depth. Flavours associated with dishes, teas, pickles and desserts can add savoury, spiced or umami notes to familiar cocktail formats.

  • Presentation complements the flavour. Inclusions like edible garnish, aromatic bubbles and special serving methods add another sensory layer rather than just being decorative.

Conclusion

The city’s cocktail scene is about creative interpretations that challenge the conventional combinations but without losing the structure of the classics. SOKA builds on Indian ingredients, Bar Spirit Forward updates classics, ZLB23 interprets culinary references, Muro connects Asian flavours with existing formats, and 403 Forbidden puts the emphasis on personalisation. The bars in Bangalore are not just about novelty, but how well the ingredients, techniques and concepts come together to make the final drink.
