1. Select The Right Chilli

Bird's eye chillies produce a potent spice with a crisper flavour, while milder choices like jalapeños add a spiciness with grassy and slightly sweet flavours. The Picante cocktail's layers are increased by the fruitier spiciness that serrano and habanero peppers offer. The decision is based on how much spice and flavour you want. Capsaicin is released more quickly when chillies are sliced prior to infusion, enhancing the flavour. Removing the seeds and inner membranes before infusion produces a milder effect because they retain the majority of the spice. The flavour of spirits with chilli infusions is impacted by proper storage. The consistency of the infused alcohol is maintained, and evaporation is avoided by keeping it in a sealed container. While setting it slows down the process, room-temperature storage permits the infusion to continue growing. Periodic taste tests aid in determining the time for usage because spice may get potent beyond the specified level if stored for an extended period. 

Chillies add spice through capsaicin, which infuses into the drink when muddled, shaken, or steeped in spirits. Slicing or lightly charring a chilli before use enhances its flavours. As a garnish, a whole chilli or a thin slice on the rim provides aroma and a controlled spice.
