Crafting The Perfect Picante Cocktail: 5 Tips For Mixology Beginners

One of the more contemporary and modern renditions of the classic margarita cocktail, the picante is an interesting coming together of 30 ml quality tequila, 15 ml agave syrup and 10 ml lime juice. What adds the finishing touch to this recipe are 3-4 slices of red chillies and a few cilantro leaves muddled into the mix. This builds a spicy and herbal touch into the drink, distinguishing it from a classic margarita.   

But preparing this seemingly simple cocktail requires just a little bit of skill as the sour to spicy to sweet ratios need to be adjusted for arriving at a well-balanced mixture of flavours.

Choose The Right Tequila  

One of the most basic tips for preparing the picante cocktail is choosing the right kind of tequila. A reposado or a slightly aged tequila will give depth to the cocktail and imbue it with a caramel-like quality. Generally, a modern picante cocktail made using 30 ml reposado tequila would be a suitable alternative particularly when the drink is being prepared with the addition of pronounced spicy notes. The deep smokiness of premium reposado tequila like Don Julio and others will balance out this spiciness in the cocktail.

Balance Spiciness And Flavour  

The next essential tip for concocting a fine picante is to balance the spiciness and citrusy flavours in the mix. A picante recipe contains 30 ml good quality tequila reposado and 15 ml fresh lime juice coupled with 10 ml agave syrup and 2-4 slices of finely chopped chillies. This means the picante contains multiple spicy and sour notes that need to be balanced so the elements come together in a uniform mix. For this, use the precise measurements of each ingredient and adjust the spiciness if needed according to the spice level of the chillies.

Highlight Citrus Textures  

Another interesting way to perfect the picante recipe is to balance its spicy notes with citrusy textures in such a manner that the sour flavours of lime juice are highlighted in the blend. The acidity of freshly squeezed lime juice, strained finely, will give the drink a smooth texture. And these citrusy flavours become even more pronounced with the addition of 2 tablespoons grapefruit juice so that the spicy notes remain consistent yet never become too overpowering. A slice of lime as a garnish will also bring in a textural layer to the drink for a sour finishing touch.

Shake Well For Blending  

One of the most important elements for perfecting the picante cocktail is to shake it well before blending. Build all the ingredients together in a cocktail shaker and add plenty of ice. Shake well until the drink acquires a chilled quality and is sufficiently aerated to become a light blend of flavours. Use slightly large ice cubes to slow down dilution and pour the drink into a margarita glass as it is, so all the different flavours are released gradually into the blend.

Use Salty And Spicy Garnishes  

To add the finishing touch to this sour and smoky cocktail, use garnishes that will bring out the flavour profile inherent to the drink. A salted rim, akin to a margarita cocktail glass, will introduce salinity into the cocktail that complements the sour and spicy ingredients. Alternatively, dip the glass in a mix of salt and tajin dressing for rimming to add a spicy note into the garnish. A chilli slice or a charred lime wheel can also be suitable garnishes which build into the aesthetic effect of the smoky cocktail.
