The Cocktail Sorbet Recipe

The classic Pornstar Martini cocktail calls for a small glass of champagne served alongside the cocktail. When you transform the cocktail into a sorbet, you can skip the champagne altogether. Alternatively, you can add it when making the sorbet. It helps keep the alcohol-infused sorbet from freezing completely solid.

  • 100 ml Smirnoff vanilla vodka

  • 50 ml passion fruit liqueur

  • 150 ml passion fruit puree or fresh passion fruit juice

  • 30 ml fresh lime juice

  • 60 ml simple syrup (sugar and water boiled together)

  • 50 ml champagne (optional)

  • Fresh passion fruit seeds for garnish

Method:

The first step is to mix all the liquid ingredients in a bowl. The next steps depend on whether you have an ice-cream maker or not. 

Option A: If you have an ice cream maker. 

  • Pour the liquid mixture into an ice cream maker and churn it according to the manufacturer's instructions until it forms a thick sorbet.

  • Transfer the mixture to a shallow, airtight freezer-safe container. Freeze the sorbet for at least 2 to 4 hours until it reaches a firm, scoopable texture.

  • Scoop the sorbet into chilled glasses and top with fresh passion fruit seeds before serving.

Tip: Chill your liquid mix in the refrigerator for at least two hours before putting it into your ice cream maker. A cold mix freezes faster and creates smaller ice crystals.

Option B: If you don’t have an ice cream maker. 

  • Pour the mixture into a wide, shallow metal baking pan or container. A wider pan helps the liquid freeze faster and more evenly. Cover it tightly with plastic wrap or a lid. Place the pan in the freezer for about 1.5 hours. 

  • Take it out and use a fork, whisk, or hand mixer to vigorously beat the mixture. Break up any frozen crystals along the edges and mix them into the centre. Return the pan to the freezer. 

  • Repeat this stirring process every 30 to 45 minutes for the next 2 to 3 hours. Each time you mix, the sorbet will become creamier and hold more air.

  • Once it reaches a thick, slushy consistency, leave it to freeze completely for another 2 hours before serving.

Tip: If you don’t have an ice-cream maker but own a food processor or high-speed blender, you can make this even easier. Let the mixture freeze completely solid overnight in a freezer bag or shallow pan. Break the frozen block into smaller chunks, toss them into your food processor, and blend until smooth and velvety. Serve it immediately!

Things To Keep In Mind For Sorbet

The recipe requires a few key tips to ensure the best results. 

  • Firstly, keep the alcohol under 6 per cent of the total liquid volume. Too much alcohol stops the sorbet from freezing solid. In this regard, ensure you add enough sugar or simple syrup. Sugar lowers the freezing point just enough to keep the sorbet soft and scoopable instead of rock hard.
