Introduction

When it comes to vodka cocktails, the Pornstar Martini cocktail is definitely one of the most well-known drinks out there. The drink originated in the early 2000s in London but can be found across bars even today. It even has a day dedicated to it, International Pornstar Martini Cocktail Day, celebrated annually on September 6th. And this year, I decided to recreate this modern classic at home for that day. 

Read ahead to understand what I got right (and all that I got wrong!) about the recipe.

Making The Pornstar Martini Cocktail At Home

The classic Pornstar Martini cocktail recipe relies on vodka, passionfruit liqueur and juice (or puree), vanilla syrup, and fresh passionfruit. It requires two basic bar tools–a shaker and a strainer–and is served in a chilled coupe glass. You can opt for vanilla-flavoured vodka, or use a neutral vodka and vanilla syrup. 

Since I did not have passionfruit liqueur and needed to compensate for its sweetness with a syrup anyway (as per fellow cocktail enthusiasts), I chose the Smirnoff No 21 vodka as the base. 

Pornstarr Martini Cocktail Recipe: Ingredients & Method

Here are the measurements I followed for a single serve: 

  • 60ml Smirnoff vanilla vodka

  • 45ml passionfruit juice

  • 15ml fresh lime juice 

  • 20ml vanilla syrup

  • Ice

I followed this recipe for the steps

Shaking: I started by adding all my ingredients into a shaker and shaking hard. I went for a 10-second shake, focusing on the temperature of the shaker. Once I opened the shaker, the cocktail inside didn’t have the signature rich, velvety, light-coloured layer of foam on top. Thus, I went back to the drawing board, i.e, closed the shaker and repeated the process for another ten seconds. Finally, the drink looked bright yellow-orange from the fruit. 

Strain and Serve: Once the drink was ready, I strained it into a coupe glass. Since I did not have a passionfruit for garnish, I went with a dried orange wheel, floating it on top of the foam. For the presentation, I went the classic route and placed the cocktail next to a small glass of Champagne.

What Went Wrong With My Pornstar Martini Cocktail

While my drink looked somewhat like the classic Pornstar Martini cocktail, there was a clear difference in the flavour and texture. Here’s what went wrong. 

Not chilling the coupe glass

A martini cocktail, by design, is meant to be cold and served in a chilled glass. When I served the drink, the glass was at room temperature. Not only did my drink take on the temperature of the glass, but the froth I’d worked so hard at went away a lot faster. 

The fix: When I created the drink the second time, I added some ice cubes to the coupe glass before I started shaking. Once the drink was ready, I simply threw out the ice cubes from the glass before straining the drink into it. The temperature for the drink and the cocktail glass matched, and it didn’t lose its froth or crispness. 

Not shaking the tumbler long enough

This cocktail is all about the shaking. I got three things wrong in that one technique: I didn’t shake it long enough or hard enough, but before all that, I didn’t seal the glass and almost spilt the drink. 

The fix: Always check if the shaker is tightly sealed. Shake it hard, for at least 15 seconds, and also listen for the sound of ice. Initially, I was only relying on whether the shaker was cold to touch. The second time around, I also kept my ears cocked to the sound of the ice hitting the inside of the tin. Once it changed from sharp clattering of ice to a muffled, smooth swish, I knew the cocktail was ready. 

Not adjusting for the lack of puree

The original recipe includes passionfruit puree, which is thick enough to lend the drink that frothy top. Since I went with just juice, the froth was really light. The small amount of bubbles created from shaking faded quickly enough, leaving a smooth, liquid martini cocktail texture instead of a thick foam. 

The fix: As per experts, I could have added 15 ml of egg white or aquafaba to the shaker. It would have helped to create the foam layer usually provided by thick purée.

Pornstar Martini Cocktail Recipe: Other Common Mistakes

While I did mess up on two accounts, I was careful of avoiding other common mistakes that usually happen when making this cocktail at home: 

  • Imbalanced sweetness or sourness: Adding too much passion fruit puree makes the drink overly sour, while excess vanilla syrup overwhelms the palate with sugar. 

  • Skipping the strain: Pouring directly from the tin lets tiny ice shards into the glass, ruining the smooth texture and look.

  • Using the wrong glassware: Serving the drink in large wine or gin glasses instead of a coupe glass compromises the presentation. 

  • Mishandling the side: Pouring the sparkling wine/Champagne directly into the cocktail ruins the flavour balance; it is meant to be consumed in short intervals, while you sip the cocktail. 

Final Verdict

As far as techniques go, this was not a difficult cocktail to make. As an amateur home bartender, I almost certainly got the shaking wrong, but the Pornstar Martini cocktail recipe was forgiving enough. I also didn’t have to muddle any ingredients or infuse any spirits, which made the whole process simpler and quicker. The vanilla vodka that I chose provided the right balance between flavour and solid structure, and the precise measurements ensured the cocktail came out well-balanced. 

However, there’s no denying the change in taste due to the absence of passion fruit puree and liqueur, both ingredients of the original recipe. So, if you want to experiment or simply try the recipe at home, arrange for at least one of the two in advance. Or else, simply order the drink at a bar for an authentic expression.
