Gin Rickey

The Rickey was first made with bourbon in 1883. But ginterested parties decided to remix the highball drink, making it similar to a Tom Collins with lime rather than lemon.

Ingredients

How many serves?

2.1 units of alcohol per serve

  • 50mlLondon Dry Gin

  • 25mlLime Juice

  • 100mlSugar Syrup

  • 100mlSoda Water

  • 1wedgeLime

Equipment

  • 1 x Tall glass
  • 1 x Cocktail Shaker
  • 1 x Jigger
  • 1 x Knife
  • 1 x Chopping Board
  • 1 x Ice

Method

  • Ice

    Fill your cocktail shaker with ice. (Most experts suggest filling your shaker between half and 2/3 full of ice for the perfect finished product)

  • Pour and shake

    Using a jigger, pour 50ml London Dry Gin, 25ml lime juice and 10ml sugar syrup into the shaker.

    Shake vigorously for between 12-15 seconds. Don't worry about being exact, just make sure the surface of the shaker feels chilled. 

  • Strain and mix

    Use a cocktail strainer to strain into a tall glass.

    Top up with 100ml soda water.

  • Garnish and serve

    Use a chopping board and sharp knife to cut a lime wedge and place on top of drink to garnish.
