The Clover Club is an impeccable drink to enjoy. Dry yet zesty with beautiful foam, thanks to the egg white topping. This cocktail is the perfect combination of pretty visual appeal and delightful texture.

What you’ll need

Ingredients

2.4 units of alcohol per serving

Equipment

  • 1 x Coupe glass
  • Jigger
  • Shaker
  • Strainer

Method

Raspberry syrup recipe

Add 1 cup sugar to 1/2 cup water to a pot. Stir over medium heat until the sugar dissolves. Reduce the heat to low and add 1/2 cup of fresh raspberries. Macerate into a pulp. Fine strain to remove the berry's seeds. Add 15ml of gin as a preserve (optional). Cool in the fridge until ready to serve.

Ice

Add a generous amount of ice to the cocktail shaker. Follow with the gin, lemon juice, raspberry syrup, and egg white.

Shake

Shake vigorously until well-chilled. The outside of the shaker should be very cold.

Garnish

Strain into a coupe glass and garnish with raspberries.
