The pineapple paloma cocktail is a tropical take on Mexico’s popular classic. It assertively accentuates the luscious essence of pineapple, making it the focal point of this vibrant tequila-based drink. The result is a smooth and fruity pineapple-flavoured beverage that highlights its brilliant colour, elevating the aroma and visual appeal.

  • Don Julio tequila (or any other tequila of choice)
    30ml
  • Fresh grapefruit juice
    45ml
  • Fresh pineapple juice
    45ml
  • Fresh lime juice
    15ml
  • Chilli-lime seasoning or fine black pepper
    For rimming
  • Ice cubes
    (for stirring and serving)
  • Lime wedge
    For garnish

Method

  1. Step 1

    To prepare the serving glass, moisten the rim with a lime wedge and lightly roll it in the chilli-lime seasoning or finely ground black pepper.

  2. Step 2

    Fill a serving glass with fresh ice and set aside.

  3. Step 3

    In a separate mixing glass, combine the tequila, grapefruit and pineapple juice with lime juice.

  4. Step 4

    Add ice cubes and stir the mixture vigorously with a bar spoon for about 20-30 seconds or until completely cooled and incorporated.

  5. Step 5

    Strain the chilled mixture into an ice-filled serving glass and garnish with a fresh lime wedge; serve immediately.

Tips & Suggestions

  • Freeze fresh pineapple juice in an ice tray. Add one of these cubes to the mixing glass instead of conventional ice; when it melts, it imparts pure, undiluted pineapple flavour.

  • After applying the pepper rim, run a culinary torch quickly around it for 1-2 seconds to delicately toast the pepper, bringing out its scent and slight heat.
