Mocktails are designed to be like cocktails, but they are not simply variations of cocktails. Mocktails are built from the same four types of ingredients typically found in cocktails. However, these ingredients are stacked on one another in various combinations and proportions to replicate the aroma, flavour, and texture of the spirit content.

To illustrate, a mocktail version of a Mojito cocktail might use lime juice, mint leaves, and soda as the base ingredients. However, to add dimension to the drink, herbs, syrups, or tea would be used to build cocktail characteristics. Since there is no alcohol present, the drink will typically have a thinner body than alcoholic cocktails. Therefore, texture is often carried through the use of fruit pulp, honey, and/or saline.

The behaviour of alcoholic beverages is determined by their ABV (alcohol by volume). Ethanol contributes to both the aroma of a beverage and to the structure of the actual drink. For this reason, cocktails are perceived as more structured than other mixed drinks.

  • Shaking: Typically used for cocktails that require the incorporation of citrus, such as a Daiquiri cocktail and light surface aeration. When used in a mocktail, shaking creates texture without the presence of alcohol.

  • Stirring: Commonly performed for spirit-forward drinks like a Manhattan cocktail, as it keeps them clear and helps to build viscosity in the drink. In mocktails, stirring is infrequent because they typically do not contain as many density-adding ingredients.

  • Building: Highball-style drinks (including different styles of Gin & Tonic cocktail) are built in the glass directly as opposed to using a shaker, bowl, etc., thereby preserving carbonation and clarity.
