Ramos Gin Fizz
An absolute showstopper of a cocktail. Essentially a creamy version of the Tom Collins, the Ramos Gin Fizz does take a while to make as the key is in a long hard shake! For that reason, this is probably more suited for more intimate celebrations where time isn't so precious.

60mlGin
15mlLemon juice
15mlLime juice
23mlSugar syrup
1mlOrange flower water
1eaEgg white
23mlHeavy cream
100mlChilled soda water
4Ice
2.4 units of alcohol per serve
Equipment
Collins glass
Jigger
Shaker
Strainer
Method
Add
Add all ingredients minus the soda to a cocktail shaker.
Shake twice
Shake with ice for about 15 seconds and strain back into the shaker.
Dry shake (without ice) for about 20 seconds.
Pour
Slowly pour 2/3 of the cocktail contents into the Collins glass at the same time as the soda. They should be as one while entering the glass. Hold them at a higher than normal height when pouring. Leave room at the top of the glass.
Finish & Serve
Chill the cocktail in the Collins glass in the fridge for about a minute. Take it out and slowly pour in the remaining cocktail from the shaker.
This should achieve an elevated foam top.
