Mole Margarita

This margarita riff marries the zesty brightness of a classic margarita with the rich, complex notes of traditional Mexican mole sauce. A mix of tangy lime, smooth tequila and a hint of chocolate and spice creates a delicious experience that will be sure to elevate your margarita game.

  • Casamigos Blanco Tequila or Don Julio Blanco Tequila
    1.5oz
  • Lime Juice
    0.75oz
  • Spiced Demerara Syrup*
    0.25oz
  • Mole Bitters
    2 dashes
  • Lime Wheel
    To garnish
  • Cinnamon Stick
    To garnish

Method

  1. Step 1

    Combine ingredients in a cocktail shaker with ice.

  2. Step 2

    Shake vigorously and strain into a rocks glass with fresh ice.

  3. Step 3

    Garnish with a lime wheel and a cinnamon stick.

Spiced Demerara Syrup


Ingredients
  • 35 Cinnamon Sticks

  • 2 tsp. Black Peppercorn

  • 1 tsp. Green Cardamom

  • 1 tsp. Star Anise, Toasted

  • 3 cups Sugar

  • 1.5 cups Water

Directions
  1. In a medium pot, heat cinnamon sticks, black peppercorn, green cardamom and star anise until toasted, about 5 minutes.

  2. Add sugar and water, allowing the mixture to heat for 10-15 minutes until the sugar is dissolved, stirring occasionally to prevent caking.

  3. Remove from heat and let infuse for 90 minutes.

  4. Strain spices.

  5. Transfer syrup to a quart sized container. Keep refrigerated.
