Mole Margarita

- Casamigos Blanco Tequila or Don Julio Blanco Tequila1.5oz
- Lime Juice0.75oz
- Spiced Demerara Syrup*0.25oz
- Mole Bitters2 dashes
- Lime WheelTo garnish
- Cinnamon StickTo garnish
Method
- Step 1
Combine ingredients in a cocktail shaker with ice.
- Step 2
Shake vigorously and strain into a rocks glass with fresh ice.
- Step 3
Garnish with a lime wheel and a cinnamon stick.

Spiced Demerara Syrup
35 Cinnamon Sticks
2 tsp. Black Peppercorn
1 tsp. Green Cardamom
1 tsp. Star Anise, Toasted
3 cups Sugar
1.5 cups Water
In a medium pot, heat cinnamon sticks, black peppercorn, green cardamom and star anise until toasted, about 5 minutes.
Add sugar and water, allowing the mixture to heat for 10-15 minutes until the sugar is dissolved, stirring occasionally to prevent caking.
Remove from heat and let infuse for 90 minutes.
Strain spices.
Transfer syrup to a quart sized container. Keep refrigerated.
