The bellini cocktail is a classic Italian drink known for its distinct flavour, created with two main components, making it suitable for special occasions and celebrations. Named after the 15th-century Italian painter Giovanni Bellini, tradition says its exquisite pink tint was inspired by the colour palette he used in his works. This visually appealing beverage is traditionally served chilled in a champagne flute with no ice, allowing the vivid fruit and crisp sparkling wine to shine through.

  • Fresh peach puree
    15ml
  • Prosecco
    30ml

Method

  1. Step 1

    Make sure the fresh peach purée and prosecco are sufficiently chilled while you chill a champagne flute in the freezer for at least 10 minutes.

  2. Step 2

    Add the cooled, fresh purée at the bottom of the cold flute and pour the chilled prosecco slowly into the glass, being careful not to foam and keep the effervescence intact.

  3. Step 3

    To combine the ingredients, gently swirl once or twice with a bar spoon, taking care not to lose any fizz; serve immediately.
