The Baileys eggnog cocktail is a richer version of the popular classic, with an enhanced cream base. A festive and winter favourite with a luxurious blend featuring Irish cream liqueur, the beverage is typically served garnished with a dusting of nutmeg or cinnamon.

  • Baileys Original Irish cream liqueur (or any Irish cream liqueur of choice)
    30ml
  • Cold egg
    1
  • Sugar
    Teaspoon
  • Cold milk
    90ml
  • Vanilla extract
    Teaspoon
  • Pinch of ground nutmeg
    For garnish
  • Cinnamon stick
    For garnish

Method

Step 1

In a mixing bowl, combine the cold egg and sugar to whisk until the sugar dissolves and the mixture turns airy and frothed.

Step 2

Gradually whisk in the milk and vanilla extract, ensuring that all ingredients are thoroughly incorporated to form a smooth base.

Step 3

Pour the contents into a chilled serving glass, before adding the Irish cream liqueur.

Step 4

Stir to combine, garnish with freshly grated nutmeg and, if preferred, a cinnamon stick.

Step 5

Serve immediately when still chilled.

Tips & Suggestions

  • Consider using just the egg yolk rather than a whole egg for unsurpassed richness and a velvety mouthfeel.  This adds creaminess without the potential ‘eggy’ aroma of the white.

  • To infuse a more authentic spice flavour, slowly reheat a small amount of milk with the vanilla pod (or extract) and a piece of cinnamon stick, soak for 15 minutes and chill thoroughly before mixing.
