3. The Benefit

"The Benefit" is the perfect drink to serve your guests if you're searching for something different. Ginger, lemongrass, and grapefruit come together in this lovely pink sake cocktail to create a flavour that is both complex and fresh. It will give you extra heat thanks to the vodka addition, making it ideal for a night out.

Ingredient

6 stalks fresh lemongrass 3-inch piece fresh ginger 50 grams sugar 240 ml vodka 950 ml premium sake 355 ml freshly squeezed pink or ruby red grapefruit juice 120 ml freshly squeezed Meyer lemon juice

Method

Cut off the woody top half and bottom end of each lemongrass stalk, saving the tops for garnish. Add the remaining segments to a small food processor after roughly chopping them. Peel and coarsely chop the ginger, then add it to the food processor with the sugar. Pulse until all the ingredients are nicely chopped. Pour the lemongrass mixture into a nonreactive bowl, quart-sized mason jar, or 4-cup glass measuring cup. Keep it for 15 minutes in roo temperature. Add the vodka and mix. Strain vodka into a pitcher, pressing down slightly to release the flavour from the solids. Add the sake, Meyer lemon juice, and grapefruit juice, and stir. Pour into glasses filled with ice. Garnish with the lemon grass stalk without the woody parts.
