Pomegranates are generally used in a number of different ways, from syrups to liqueurs to juices, while crafting cocktails and mocktails. For a mixology enthusiast, crafting pomegranate drinks means getting well-acquainted with these flavour notes and the ways in which they can be combined with other ingredients and mixers for bringing about a balanced blend. This involves understanding how the sweet and tart notes in pomegranates can be balanced out to create flavoured, well-rounded drinks.

Use Fresh Pomegranate Juice  

One of the best ways to balance the sweet and tart flavours in pomegranates is to use freshly squeezed juice. Not only does fresh juice contain brighter and more robust flavours but it is also slightly less tart as the fruit is being crushed even before it over ripens. A freshly squeezed pomegranate juice can be strained using a fine mesh strainer so that this process can yield a drink which is brightly coloured and suitably flavoured with sweetness and subtle tartness.

Add Sweeteners Gradually  

Another pro tip for bringing about a more structured feel to a pomegranate-infused drink is to sweeten it gradually. Sometimes a pomegranate juice that is too sweet might turn a cocktail into an overpowering mix because of its pronounced flavours. Add simple syrup or honey to such mixes in small portions, tasting as one goes along. Introducing sweeteners steadily contains the overall sweet taste of the drink. Use sweeteners like honey, agave and even pomegranate molasses for building subtle floral flavours into blends.

Complementary Acidic Flavours  

Along with sweetness, managing the acidity in pomegranate cocktails and mocktails is also crucial for arriving at a well-balanced drink. Acidic flavours in the pomegranate lend this ingredient balance its sour and even tart tastes as they are complemented by the addition of a splash of lime juice.   

Other citrusy ingredients that can brighten the fruit’s acidity while undercutting some of its more tart notes is a dash of apple cider. This is a particularly useful hack for those times when the drink becomes tangy and sweet all at once. Adding a bit of apple cider would balance out some of these pronounced flavours.

Salt And Bitters For Balance  

When a pomegranate drink is brought together with the addition of the fruit flavoured liqueur or even pomegranate-infused simple syrup, what brings about a good composition into the drink is the addition of a pinch of salt. The salty taste makes the sweet flavours of pomegranate more pleasantly pronounced. And introducing a dash of orange bitters or any other citrus bitters into the drink cuts through the acidic notes in the drink which threaten to throw it off balance.

Where pomegranate is complete with fresh flavours, spices like cinnamon and ginger or even cloves are full of warmer notes. These contrasting elements come together in drinks like a pomegranate punch or a hot pomegranate infused toddy in a fusion of citrusy and earthy flavours. The spices cut through the acidity and sweet notes as well as tart flavours in the drink to bring about a mix that is rich and full-bodied.
