Bellini Cocktail: Understanding The Popularity Of The Iconic Brunch Drink

Introduction 

The Bellini cocktail is a balanced combination of bubbly and fruity elements. Its light, effervescent qualities and vibrant peach hue make it an ideal drink for cocktail brunches and celebratory gatherings. The Italian cocktail was named after the Venetian artist Giovanni Bellini, whose works featured a unique shade palette. It was full of delicate pinks that echoed the colour of ripe peaches.   

The Bellini cocktail has a light yet zesty flavour profile. It is fruity with a nuanced balance between sweetness and tartness. The classic recipe calls for Prosecco wine and ripe white peaches. However, yellow peaches are more commonly used due to availability and convenience. Also, the prosecco wine can be swapped for Spanish cava wine or any other sparkling wine. But the original cocktail uses Italian prosecco wine to get the crisp, dry taste.   

To make a batch of Bellini cocktails for 20, you need 1 bottle of sparkling wine (ideally, prosecco wine) and 350 ml to 450 ml of white peach puree. Divide the puree equally into 20 chilled champagne flutes, before topping each glass off with the bubbly wine. This ensures that each sip is fully flavoursome and effervescent.

To cut through the richness and offer a change in flavour, fruity cocktails such as mimosa cocktails and bellini cocktails are ideal.

The classic cocktail is appreciated for its slightly sweet yet fruity profile, it makes it an ideal companion to sweet as well as savoury dishes. Experimenting with the Bellini cocktail’s ingredients also helps showcase seasonal fruits and flavours. This makes the cocktail easy to make and prepares ahead for successful brunches.  

Popular Bellini Cocktail Variations 

  1. Raspberry Peach Bellini Cocktail 

This cocktail is on the fruitier side with more robust notes of tartness and sweetness. The drink also showcases a sunset-like hue, full of blushing pinks and mellow yellows. To make this drink for 20, you need 2 diced peaches, 1 bottle prosecco wine, 1-2 tbsp simple syrup, 1 tbsp lemon juice, ½ cup raspberries, and ½ cup mint leaves. Puree the peaches, raspberries, lemon juice, simple syrup and mint leaves. Chill the mixture along with glassware and prosecco. Scoop 2 tbsp of the puree into each chilled glass before topping off with equal amounts of prosecco wine for 20 glasses.

  1. Strawberry Basil Bellini Cocktail 

This cocktail has a sweet yet tangy flavour profile due to strawberries and a touch of zinginess due to basil. Its bright pink shade with a bubbly finish makes this Bellini cocktail variation ideal for winter cocktail brunches. To make this drink for 20, use 2 cups of strawberries, 2 cups of sugar and 2 cups of water to make syrup. Simmer all the ingredients in a pot on medium-low heat for 10-15 minutes. Let the viscous mixture cool for a while before straining it into a jar. Steep basil leaves in the syrup for 5-7 minutes before removing them. Chill the syrup along with glassware and a bottle of prosecco. Add 2 tbsp of the strawberry basil syrup into 20 chilled glasses before topping them up with the prosecco.

  1. Cranberry Bellini Cocktail 

This visually striking cranberry Bellini cocktail has a complex flavour profile leaning more towards the tart and dry side. To make this drink for 20, you need 360 ml freshly extracted cranberry juice, 260 ml simple syrup, a bottle of prosecco wine, whole cranberries and rosemary for garnishing. Add cranberry juice and syrup into a cocktail shaker with some ice. Shake well to combine before straining equally into 20 chilled glasses. Top with Prosecco wine before serving the Bellini cocktail variation with cranberry and rosemary sprig garnishes.
