Baileys Malai Kulfi Recipe By Kirti Bhoutika

Introduction
A traditional Indian dessert that resembles ice cream, kulfi is served chilled on a stick or on a plate as a rich, dense treat after dinner. Make Baileys malai kulfi as a contemporary variation of the classic dessert that experiments with the different flavours this sweet dish can embody.
While the more popular kulfi types include the classic malai kulfi, along with others such as pista and rose kulfi and even the more modern chocolate kulfi, the Baileys malai kulfi presents itself as a low-effort reimagination of this staple dessert.
Malai kulfi has always been a luxurious dessert which can be adorned with different complementary nutty and floral flavours. Kulfi can be served by itself or can be paired with different drinks and desserts such as falooda or gulab jamun. The Baileys malai kulfi is no different. It makes for a good base that can be combined with warm desserts like a brownie or bread pudding for an interesting temperature contrast.
You can include this dessert in your dinner party menu by preparing the Baileys malai kulfi at home, from scratch. For this, follow a simple Baileys malai kulfi recipe from Kirti Bhoutika, who lends the dessert a flavourful twist in just a few easy steps. Simple ingredient additions and an equally straightforward cooking technique make the kulfi an easy enough dessert to prepare for special occasions and dinner parties.

Ingredients:
500 ml milk
120 ml cream
80 ml condensed milk
5 gms coffee powder
45 ml chopped hazelnuts
30 ml Baileys Original Irish Cream Liqueur
Gold foil for garnish

Method:
Begin preparing the malai kulfi by boiling milk in a saucepan. Take 500 ml milk and let it heat over a medium flame. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
As the milk starts to warm, slowly add 120 ml cream, stirring constantly to achieve a rich, silky consistency.
Avoid bringing the milk and cream mixture to a bubbly boil as this may hamper texture and curdle the milk. Instead, let the ingredients integrate well, and heat gradually. This brings a creamy richness to the kulfi’s texture.
When the mixture is adequately warmed, add 80 ml condensed milk for a slight sweetness. The condensed milk will also thicken the mixture once it is thoroughly integrated into the recipe. Remember to keep stirring continuously in this step to avoid lumps.
Next, add 5 gms coffee powder and use a whisk to mix it fully into the creamy kulfi base. All the coffee granules must blend well into the creamy mixture.
Now, lower the flame slightly and cook the kulfi mix for about 3-4 additional minutes, to let the mixture thicken even more.
Turn off the stove and allow the thick base to settle for a minute. Add 30 ml Baileys Original Irish Cream Liqueur.
Follow this with the addition of 45 gms finely chopped hazelnuts for a mild crunch.
Pour the mixture into a serving glass, a kulfi mould or a bowl according to your presentation preferences. Ensure the chopped hazelnuts are distributed evenly throughout the kulfi.
Place in the fridge for at least a couple of hours to let the kulfi set properly.
Garnish with a gold foil before serving.

The resulting dessert is a rich, silky, coffee-infused sweet treat that acquires a nutty tone with the hazelnut addition and a smooth texture that is the result of the Irish cream liqueur coming together with milk, cream and condensed milk.
This easy Baileys malai kulfi recipe can be topped off with other garnishes as well, such as crushed pistachios, dried rose petals and saffron strands. Make it at home from scratch by following this fuss-free recipe the next time you have guests coming over for dinner. Baileys malai kulfi will pair well with a classic Indian dinner fare comprising biryanis, kebabs and raitas as its creamy undertones complement the richness of the sumptuous meal.
