Ingredients:

  • 500 ml milk

  • 120 ml cream

  • 80 ml condensed milk

  • 5 gms coffee powder

  • 45 ml chopped hazelnuts

  • 30 ml Baileys Original Irish Cream Liqueur

  • Gold foil for garnish

Method:

  • Begin preparing the malai kulfi by boiling milk in a saucepan. Take 500 ml milk and let it heat over a medium flame. Stir occasionally to prevent the milk from sticking to the bottom of the pan.

  • As the milk starts to warm, slowly add 120 ml cream, stirring constantly to achieve a rich, silky consistency. 

  • Avoid bringing the milk and cream mixture to a bubbly boil as this may hamper texture and curdle the milk. Instead, let the ingredients integrate well, and heat gradually. This brings a creamy richness to the kulfi’s texture.

  • When the mixture is adequately warmed, add 80 ml condensed milk for a slight sweetness. The condensed milk will also thicken the mixture once it is thoroughly integrated into the recipe. Remember to keep stirring continuously in this step to avoid lumps.

  • Next, add 5 gms coffee powder and use a whisk to mix it fully into the creamy kulfi base. All the coffee granules must blend well into the creamy mixture.

  • Now, lower the flame slightly and cook the kulfi mix for about 3-4 additional minutes, to let the mixture thicken even more.

  • Turn off the stove and allow the thick base to settle for a minute. Add 30 ml Baileys Original Irish Cream Liqueur. 

  • Follow this with the addition of 45 gms finely chopped hazelnuts for a mild crunch.

  • Pour the mixture into a serving glass, a kulfi mould or a bowl according to your presentation preferences. Ensure the chopped hazelnuts are distributed evenly throughout the kulfi.

  • Place in the fridge for at least a couple of hours to let the kulfi set properly.

  • Garnish with a gold foil before serving.
