These creamy concoctions are the perfect surprise for sweet-toothed guests. Imagine serving guests a scoop of rich bourbon vanilla bean ice cream alongside a classic Old Fashioned, or margarita sorbet that perfectly complements a vibrant lime cocktail. The combination of creamy texture and liquor flavours creates a unique fusion of cocktail and dessert that is both sophisticated and fun.

It is very important to note that alcohol-infused ice creams must be made with precise, measured alcohol additions. The idea is to enhance the flavour of ice creams, and this may call for sauces or toppings cooked with 30ml or less of alcohol for the sake of flavour. In fact, cooking alcohol with a caramel sauce or chocolate sauce evaporates the alcohol content of the spirit, leaving only the base flavours of the spirit.

Alcohol-Infused Ice Cream Delights

Showcase a lineup of handcrafted alcohol-infused ice creams, each a blend of velvety ice cream along with the essence of classic cocktails: 1. Rum Raisin Ice Cream Savour the rich fusion of rum-soaked raisins and creamy ice cream. The recipe yields 6 to 8 servings.

Ingredients:

500 ml heavy cream

400 gm condensed milk

300 gm raisins

180 ml spiced rum

1 tsp vanilla extract

½ tsp nutmeg powder

½ tsp cinnamon powder

Method:

  1. Chop your raisins and let them soak in 100 ml warmed rum for 30 minutes.

  2. In a bowl, combine the remaining rum,  condensed milk, vanilla extract and the powdered spices well, before stirring in the rum-soaked raisins carefully.

  3. Use an electric beater to whip your heavy cream till stiff peaks are formed. Use about 1 cup of the whipped cream for this.

  4. Fold the whipped cream gently into the condensed milk and raisin mixture until it is smooth and no lumps remain. Pour and spread the final ice cream mixture into a large container and seal it with a lid or cling wrap before freezing for at least 12 hours.

  5. Let the ice cream sit for a minute or so on the counter to get luscious ice cream. 

2. Pina Colada Ice Cream Savour tropical flavours with rum-infused coconut ice cream and the tangy sweetness of pineapple. The recipe yields 10 servings.

Ingredients:

400 ml coconut cream

400 gm condensed milk

200 ml white rum

250 hm pineapple chunks

150 ml double cream

120 ml pineapple juice

120 gm desiccated coconut

Method:

  1. In a bowl, whisk coconut cream, condensed milk, pineapple juice, rum and double cream till smooth.

  2. Pour the mixture into a container and add the pineapple chunks and desiccated coconut to it.

  3. Freeze until solid, preferably overnight.

  4. Let the ice cream thaw for a few minutes before serving.

3. Amaretto Cherry Delight Experience the elegant duo of almond-flavoured liqueur and succulent cherries. A true delight for dessert enthusiasts. The recipe yields 8 to 10 servings.

Ingredients:

472 ml heavy cream

420 gm condensed milk

354 gm cherries, pitted

150 ml amaretto liqueur

120 gm dark chocolate, finely grated

1 tbsp water

1 tbsp sugar

1 teaspoon vanilla extract

Pinch of salt

Method:

  1. In a saucepan over medium heat, bring the cherries, water, sugar and 1 tbsp of amaretto to a simmer, stirring occasionally for 10-15 minutes or till cherries are very soft.

  2. Cool to room temperature and set aside. In a separate bowl, combine condensed milk, remaining amaretto, vanilla extract and salt well. Set the mixture aside.

  3. In a second large bowl, whip your chilled heavy cream till stiff peaks form.

  4. Gently fold the whipped cream, in batches, into the condensed milk mixture. 

  5. Finally, fold in your cherries and grated dark chocolate carefully and pour into a large pan or baking dish.

  6. Smooth the top and cover with a lid or plastic wrap. Let the ice cream mixture freeze for at least 6 to 8 hours to reach ideal consistency.

  7. Let your ice cream sit at room temperature for a couple of minutes before serving.
