Unlike most concealed bars that focus on drama and suspense in their entrances, POD emphasises bar excellence. The drinks use on-site ingredients and unique combinations, with coffee and chocolate getting mixed with Thai flavours. There’s the Night Shift cocktail, a Boulevardier-inspired drink that uses cold brew, whisky, bitter orange liqueur, and cacao butter, while the Gianduja cocktail showcases cognac and cacao, with notes of apple, vanilla and hazelnut gelato clarification contributing to its creamy feel. The focus on batch consistency means every drink maintains the same equilibrium throughout.

Hoots’

As one of the oldest cocktail bars in Delhi, Hoots’ prides itself on remaining low-profile despite the growing trend of speakeasies in the capital. Leather sofas, dim lights, and a small space emphasise drinks above all else. Even today, Hoots’ is known for its impeccable style of cocktail making, which overshadows the theatrical serves famous at many other bars. Their William’s Sour cocktail, one of the most well-known drinks on the menu, utilises sour sorrel leaves, citrus fruits, and the smoky flavour of Johnnie Walker Black Label to obtain its original flavour profile.

Lair

The atmosphere of this speakeasy is brought to life through immersive design in addition to the cocktails by Lair. From monochrome interiors to classic drinks, it has been a major contributor to popularising the concept of speakeasy bars in Delhi. The cocktails use ingredients harvested from various parts of India, turning traditional flavours into contemporary drinks. Along with serving a range of pan-Asian cuisine, Lair is also known for serving cocktails where ingredient selection is prioritised over unique combinations of flavour.

The Bar Behind The Sandwich Shop

As the name suggests, this one’s located behind a sandwich shop (the Japanese sando spot, Shokupan), literally. Considered to be the closest establishment to a traditional speakeasy one can find in Delhi,  visitors are greeted by no advertisements, no signs, and no common knowledge about the existence of a cocktail bar that hides behind an unmarked, white door. The cocktail menu resembles a bartender's notebook where one can find such drinks as the Ginake cocktail, featuring gin and sake, or the Katsu cocktail, based on chicken fat-washed Scotch whisky with sweet vermouth, kimchi jam, and hot sauce.

Noctis

Inspired by speakeasy cocktail culture, Noctis claims to be available strictly by reservation. It presents a contemporary drink menu made with seasonal ingredients and modern techniques, including clarified components and various flavours. Its contemporary approach to flavour development and ingredient-driven cocktails has made Noctis a popular hangout spot in Delhi. The best drinks at the bar include The Bathtub cocktail, which is a gin-based drink infused with peri peri chilli, apricots, and salted soya; and the Silk Road cocktail, which is similar to a Whisky Sour cocktail but known for its prominent citrusy orange zest flavour.

Somewhere Nowhere

Located behind a shop selling vinyl records, Somewhere Nowhere has gained a foothold in Delhi's speakeasy cocktail scene, combining Japanese style with the city's newfound appreciation for destination cocktail bars. The venue boasts wooden interiors, dim lighting and minimalist decor.

The drink menu is distinguished by clean, ingredient-focused beverages. Japanese influence is apparent in the use of yuzu, matcha, sesame and umami-based flavours, while classical methodology distinguishes the drink preparation process. The result is a cocktail program that is elegant and quite distant from the other raucous nightlife venues.

The Dressing Room

The Dressing Room is a speakeasy bar based on vintage dressing rooms. It has luxurious interiors, subdued lighting, and attentive service. The drink menu is filled with seasonal ingredients, self-produced syrups, and trends in modern bartending, continuing the tradition of classic cocktail creation. By not resorting to silly gimmicks and focusing on making a delicious product, the bar has become a great addition to speakeasy bars in Delhi.
