- White wines taste best slightly chilled-about 45 degrees. Put a bottle of white on ice if you need to chill it quickly. Red wines should be served at around room temperature or slightly cooler-about 55 to 70 degrees.
- Know the golden rule for pairing food with wine-red wine goes with red meats like beef or lamb, white wine goes with lighter meats like chicken or fish. However, if the chicken is prepared in a heavy cream sauce, or roasted in hearty vegetables, then a bright red wine, such as a pinot noir or shiraz, might beautifully complement it.
- How much wine should you pick up for your dinner party? Figure on one bottle of wine to serve two or three people responsibly over a three-hour evening. If wine will be the main beverage, pick up one bottle for every two people. A 750 ml bottle (the most common bottle size) serves about five standard glasses of wine, at five fluid ounces per glass.
- Store wine bottles sideways to keep the corks from drying out. If a cork dries out, oxygen might get into the wine and cause it to spoil. Also, keep stored wine away from light, heat, and vibration-a cool, dark, dampish basement provides the perfect wine storage environment.
- Protect your wine! Whether you're taking a bottle of wine with you to a picnic or bringing it home from the store, make sure the bottle is shielded from heat. High temperatures can cause the bottle to expand, leak or even push the cork partway out of the bottle. A good rule of thumb is to keep your wine as comfortable as you are.
